This flight features rums from
two fantastic distilleries
on the island.
Plantation XO celebrates the 20th anniversary of the Master Blender Alexandre Gabriel. The rum is distilled at West Indies Rum Distillery, the largest producer on the island of Barbados. It is molasses-based and distilled in a twin column still and the famous “Gregg’s Farm” pot still after fermenting for 3-4 days. The Rum is then tropically aged in Barbados for 8-15 years in ex-bourbon casks before being transported to France to undergo a continental aging for an additional 2-10 years in Ferrand cognac, american oak and/or bourbon casks. Containing 20 g/L of dosage, this rum is bottled at 40% ABV or 80 proof.
Since 1703, Mount Gay has been producing fine rums and is the oldest rum brand in the world. “Black Barrel” is distilled from a molasses fermentation in a traditional column still and a double retort pot still. The rum is then matured in ex-American whiskey casks. Finally, the rum is finished in very heavily charred casks that previously aged bourbons.
Bottled at 43% ABV or 86 proof, Mount Gay Black Barrel is bold, round and a bit dry possessing strong flavors.
American oak barrels play host to this rum where it ages for three to four years. Next a woody and nutmeg palette is drawn out in Ferrand French oak casks as the rum continues to mature for one to two years.
The result is a subtle and tropical Barbadian style rum, excellent for aperitifs or classic cocktails like the Mai Tai.
