Plantation Rum Flight

Maison Ferrand is one of the world’s premier boutique producers of fine spirits, and the architect of the an historical spirits movement. The company was founded by Alexandre Gabriel in 1989 with a mission to preserve age-old, craft production methods that capture the true expression of the spirit, and a commitment to revisit the classics while advancing innovation.

The adventure began with Ferrand Cognac, a 100% Grande Champagne Cognac with roots in the region stretching back over four centuries and ten generations. Alexandre then introduced Plantation Rum in 1999, reflecting his passion for old rum-making techniques and implementing the signature double aging process that distinguishes these spirits. After several years ageing in Bourbon casks in the tropics, Plantation Rum is then shipped on boats to Château de Bonbonnet in France, where the second maturation process takes place in Ferrand French oak casks, enhancing the rum with delicate tannic undertones.

In March 2017, Maison Ferrand acquired the West Indies Rum Distillery in Barbados and one-third of the renowned, which owns Clarendon, Long Pond and Inswood distilleries. Thanks to these exceptional production tools, Alexandre Gabriel fulfilled his vision of creating amazing rums through an ongoing experimentation process that pairs modern techniques with the ancestral methods of making fine rums.

Plantation Xaymaca

Produced in Jamaica, Xaymaca Special Dry is a blend of rums distilled in the old John Dore pot still at the Long Pond Distillery and the Vendôme still at the Clarendon Distillery. Plantation revives the quintessential Jamaican-style, 100% pot still rums of the 19th century with an expression of intense flavors that reveal the traditional, legendary « Rum Funk » : aromas and flavors of black banana and flambéed pineapple, locally called "Hogo," an Anglicization of the French term  "Haut Goût" (high taste). 

The rums are double aged, first in ex-bourbon from 1-3 years in a tropical setting before being sent to France to further age in ex-cognac casks for an additional year. There is zero dosage (no sugar added) before bottling. Xaymaca [za-may-kah] is the original name of Jamaica used by its first inhabitants, the Arawaks.

Plantation XO 20th Anniversary

Plantation XO celebrates the 20th anniversary of the Master Blender Alexandre Gabriel. The rum is distilled at West Indies Rum Distillery, the largest producer on the island of Barbados. It is molasses-based and distilled in a twin column still and the famous “Gregg’s Farm” pot still after fermenting for 3-4 days. The Rum is then tropically aged in Barbados for 8-15 years in ex-bourbon casks before being transported to France to undergo a continental aging for an additional 2-10 years in Ferrand cognac, american oak and/or bourbon casks. Containing 20 g/L of dosage, this rum is bottled at 40% ABV or 80 proof.

Plantation Stiggins Pineapple

A tribute to the character created by Charles Dickens in the Pickwick Papers, Reverend Stiggins, whose favorite drink was “pineapple rum.”

Pineapple rinds are infused in Plantation 3 Stars rum, then further distilled in Ferrand Copper Pot Stills. Meanwhile, the fruit is infused in Plantation Original Dark rum. Both the distillate and the fruit infusion are finally blended together.

Plantation Stiggins’ Fancy Pineapple Rum is the fruit of the labor of a third collaboration between Alexandre Gabriel and David Wondrich. Alexandre and David first worked together to create Ferrand Cognac 1840 Original Formula, which was introduced at Tales of the Cocktail in 2011 and went on to be awarded the Best New Product at the Cocktail Spirit Awards of 2012.
